It is healthy and reduces energy consumption. We started today.
Tonight I made a really easy yummy made up dinner. Trader Joe has cans of fire roasted tomatoes with green chiles. I made pinto bean quesadillas in about 15 minutes!
1 small onion diced
1 large clove garlic
1 15 oz can tomatoes with green chiles (or can of tomatoes and small can of green chiles) draining optional
1 15 oz can pinto beans drained
Large handful frozen corn thawed
Tortillas (I used flour - use what you like)
Cheddar cheese
Spray large Frying pan with Pam (or use olive oil). Sauté onion about 3 minutes in large frying pan, add crushed garlic and stir about 20 seconds. Add the tomatoes with chiles and stir. Add beans and stir gently. Let most of liquid cook off and then add corn. Cook through about three to five minutes.
Spoon filling onto half of a whole tortilla. Top with grated cheese and fold clean half onto filled side of tortilla. Put onto griddle or another frying pan. Toast both sides until golden brown and cheese is melted. Cut into wedges and devour! Yummy and filling!
