Sunday Pizza: 11.28.2010 (Part 1)

Sunday Pizza was the best one yet!  Where to start??  My camera!  So I documented C making pizza.  Then C documented Z and his friend Elliott making their own mini-pizzas!  Even cuter than you can imagine.  Plus, my dad is still in town (leaves this afternoon) and he was part of the fun and the most animated I've seen him in forever!

Sunday was exactly what this blog is all about, friends and family getting together, eating pizza, and having a fab time!  Tear...

Bacon, Onion, and Potato Frittata

Is it me or is this going to be a festive December?  Is it the economy is on the upswing or are we unable to have a lame Christmas season twice (or is it thrice) in a row?  In any case, I'm loving it!  I did some Black Friday shopping with my sis and the mall was jam packed with crazies.  Oh yeah, I was one of them!

We just got back from my sister's tree trimming dinner.  She has had it for at least three years now the day or two after Thanksgiving.  All I can say is I much prefer decorating her tree than taking it down.  She has more ornaments than Macys!

[Ok I know what you are thinking... "Didn't she just blog about something on a menu not being Kosher?  What's up with this chick?"  Well, my dad remarried a schicksa and one year when we were little either my sister or me or both of us begged our dad for a tree.  hmmm maybe it had nothing to do with J-Mo (the schicksa).  Fast forward 30 years and we still have trees and menorahs in December.  I like to think of the tree as a pagan thing anyway so I'm ok with it.]

Last night we had an appetizer that was totally a frittata but called something else.  It had chorizo in it and was pretty tasty.  On the way home I remembered we have bacon in the freezer and decided to make a frittata for breakfast!

YUM  Frittatas have to be the easiest things in the world to make.  I used a 10" oven safe fry pan and whatever you do PLEASE remember the handle is hotter than hades when you take it out and set it on the stove.  I usually leave a pot holder on the handle.  C took it out of the over so when I went to cut it I got a rude reminder.

This could easily be made veggie.  In fact, I've made it before with zuchhini, onion, mushrooms and gruyere.

Bacon, Onion, and Potato Frittata 

3-4 slices of bacon chopped into 1/2 int pieces (it is easier if the bacon is frozen)
1/3 medium onion diced
3 small fingerling potatoes diced (I think organic makes a difference but maybe it is a mind game)
6 eggs
2 tbsp milk
salt/pepper
Parmesan cheese grated (to taste - half our frittata was cheese-less)

Preheat Oven to 350.  In 10" skillet fry up bacon over medium heat.  In medium bowl scramble eggs, whisk in milk and salt and pepper. When bacon is done to your liking remove to a plate with paper towel.  Drain off most of bacon grease then add onion and potato to pan with a little salt and pepper.  After 2 minutes add about 3-4 tbsps water and cover to let potato steam about 3 minutes.  Potato should be mostly cooked and water should be mostly cooked off.  If there's a little still in the pan drain the mixture on plate with paper towel.

Put bacon, onion, and potato mixture all in the pan still on medium heat.  Add egg mixture and let cook about a minute on the stove.  Sprinkle cheese on top, if using.  Place pan in oven and cook 15 minutes.  We both like it set completely in the center and 15 minutes was enough time.  We kept it in a little longer to brown but I think broiling it for a minute would have been a better option.  mmmm I'm hungry!

That's Not Kosher

Last night Grannie Frannie watched Z so C and I could get out.  It was awesome!  First, we met friends for drinks before they all went to a concert.  We decided not to go cuz we didn't know the band.  I'm sure the concert was a blast but I felt we got the best combo of seeing everyone and then having a quiet dinner "Just. The. Two of us, we can make it if we try just the two of us... "

About a month ago we went to this wine bar/bistro place in Greenlake neighborhood of Seattle.  One look at the menu and we decided we would be back to try their food.  We went there last night.  If you are a Seattlelite it is called Eva.  I'm cruising through the menu and I see this item as an entrĂ©e.  What?!

Pork and latke?
Yep, you read it right, pork and latke.  That's just not kosher! :)  I think in this case they should have called it a potato pancake.  Other things on the menu sounded good but I just had to try this since I am a non-kosher Jewish girl with a sick sense of humor.  Turns out the latke (and the pork) was yummy.  Missing was one totally key ingredient that both the latke and pork would have benefited from: APPLESAUCE!
 
Overall, the evening was quite nice. We have stayed up much too late all week and Z has gotten up much too early.  I'm feeling like I did when Z was first born and we were in that zombie like stage. Well, he's sleeping now, maybe I should too.  zzzzzzz

My Big Girl Camera!

Ummm whoa!

Chanukah has come early for us thanks to my amazing Aunt Susan !!  She's a serious photographer as you can see here.  My aunt is my mom's sister and she lives in Houston.  I hear there are about three days a year that she can turn the air conditioning off.  Of course, here in Seattle, there are about three days I don't need my rain coat :)

She has many many cameras since it is her passion.  I asked her about buying one of her old cameras and she instead gave us an even nicer one.  She has declared it a "Big Girl Camera"!  I have been pretty much beside myself for the last week!

I have exciting plans to take GOOD pictures of what we make instead of using my lamo iPhone.  Plus, Z starts soccer in two weeks so you know I'm going to have a ton of fun working on taking action shots.  WOO HOO!!!!!

btw - Yes, we are such suburbanites... Z is 20 months and we've signed him up for soccer already.  Where's my mini-van, helmet-never-move haircut, and shellacked on make-up?  I do have a Ford Escape which is pretty much a mini-van.

I digress... bottom line - THANK YOU AUNT SUSAN!!!!  I  LOVE YOU!!! Wish I could give you a great big hug right now!  Enjoy Thanksgiving with your boys!

Kitchen Confessions: White Castle Stuffing

Truth time.  In an earlier posting I blabbed on and on about my amazing White Castle (Slider) stuffing.  Yesterday, I started cooking for real for Thanksgiving and it hit me like a ton of bricks!  I totally ruined the Slider Stuffing last year.  I mean complete mess, send C to the store for bags of stuffing (you know the crouton stuff)!  Devastating!

The recipe for 10 sliders calls for 1/4 cup of chicken broth.  We bought 24 sliders frozen.  The recipe assumes you will stuff it into a turkey.  Since I don't stuff the bird I usually add a little extra broth.  For some dumb reason I didn't consult the recipe and my memory failed me.  I use the boxes of chicken broth which contain four cups.  As I mixed the stuffing I kept adding broth little by little until I nearly added the whole box! DUH!  I had a big ol' gluey mess.  Nasty!

Wednesday since C and Z were home all day with a snow day I decided to ask C to make it. Here's the recipe over at White Castle.  He's more of a baker by nature and will actually follow the recipe.  He did up the broth but only a bit.  Guess what?  It turned out wonderful!  Moral to the story?  Know thy self and find a good partner in crime who complements you.  Of all the things I am thankful for in life, C is tops!

Sunday Pizza: 11.21.2010

Got my days mixed up but here's the lowdown on Sunday pizza.  We haven't made pizza in a couple weeks and it has been really tough on us since it is clearly our favorite thing.

First, we ran out of sauce.  The plan was to make sauce the same weekend we made sausage but ran out of steam.  Second, I had a baby shower for my sister here two Sundays ago.  Finally, we were in Chicago last weekend.  Good thing pizza rocks in Chicago!

This weekend we made sauce on Saturday and pizza, FINALLY, on Sunday.  The sauce came out yummy!  What we do is use the giant can of crushed tomatoes from CostCo and freeze it in freezer zip-locs with just enough sauce for two pizzas per bag.  Nice.  I would share the recipe but it's a secret, sorry.  Lemme know if you want some sauce and we'll figure out a way to ship!

Sunday we made pizza.  It has been so long that we did our usual sausage, turkey pepperoni, onion, and green pepper.  Heavenly.  The only hiccup was an oven temp issue.  I decided to make candied pecans, mmmm, and they baked at 350.  C threw in the pizza after and we didn't realize the temp difference until the pizza had been cooking about 10 minutes.  We normally bake the pizza at 450. One batch of dough makes 2 pizza so the first pizza was a little doughy.  Oh well, it was still good.

Man, I'm beat.  Thanksgiving is tomorrow and I have cooked my little patooty off and am ready to drop.

Chili and Tea? Couldn't be...

First off another SNOW DAY!!  C's school was cancelled and I worked from home again so all day was Daddy Daycare for Z.  He did an awesome job!  Thanks QT.

My dad is visiting and is super fit.  He walked up this enormous hill, ice and crazy sledders and all, and stopped at the store and picked up some knock-off Baileys for me.  Um Yum!  Love you Dad!  Ok, I texted him while he was out to ask him to get it but still way awesome of him to get it for me.  Lucky for me C just made another pot of coffee so "Baileys" and coffee it was.  Yippee.

Fast forward a couple hours and my throat is scratchy and I feel like a cup of tea.  Chai tea.  hmmmm how would "Baileys" taste in Chai?  Ummmmm Amazing!  YES indeed I have, in fact, died and gone to heaven.  I think I like it better than in coffee.  Still not as good as on the rocks but it is way too cold for anything on the rocks.  Don't judge.

Yesterday we had bean and corn chili for dinner.  This is one of my many recipes that I don't really follow any particular recipe to make.  Every time I make chili it comes out different but surprisingly the same.  This time I paid attention so I could pass along to others.  I couldn't resist snapping a shot with the chili and a beer in the best beer coozy in the world!  Have you ever seen a beer coozy look all studly with an 80s collar and all?! Cracks me up!  ILL-INI!!!

Bean and Corn Chili


3 dried chiles (I used New Mexican but chipotle would rock.  Let's blame the snow)
4 cloves garlic
1 large onion diced
3 celery stalks chopped (doesn't this feel like deja vu from the last couple recipes)
2-3 carrots peeled and chopped
1 green pepper diced
1/2 cup mushrooms chopped
1.5 tsp cumin
1 tsp oregano
1/2 tsp red pepper flakes
salt/pepper
1.5 Tbsp tomato paste
1.5 cups chicken broth (there I go cheating again)
1/3 cup brown lentils (I just love lentils and couldn't help myself - totally optional if you have the restraint)
15 oz can black beans drained and rinsed
15 oz can pinto beans drained and rinsed (sure throw them in the same colander, go wild)
2 15 oz cans diced tomatoes
1 cup frozen corn


First off put about a cup and a half of water in a bowl and zap for 4-5 minutes until boiling (or go old school and use tea kettle).  Put whole dried chiles in water, weight with small plate and let rehydrate about 5 minutes. Chop the veggies... come back and slice off top of chile, throw them in a blender with about 1/2 cup chile water and the garlic, blend until as smooth-ish. 

In soup pot preheat on medium high.  Add 1-2 tbsp olive oil and saute onion adding salt and pepper.  Add carrot, celery, and pepper and cook a couple minutes.  Add chile blend stir about 30 seconds.  Add tomato paste and seasoning stir about a minute.  Add broth, lentils, beans, and tomatoes stir.  Bring to simmer, lower heat to med-low and cover.  Cook for about an hour or more until lentils are cooked.  Add corn and warm through another couple minutes.  

C's family got me into having chili on macaroni.  It is tasty.  I also add shredded cheddar cheese but guess what, C doesn't.  I love him but sometimes feel sorry for him.  To go through life hating cheese must be such a bummer don't you think?  Guess what, it wasn't hot enough for him so he added hot sauce.  I did too.

Lentil Cabbage Stew

Imagine this, you get off a flight from Chicago to Seattle at 10pm on Sunday.  Your 20 month old needs to be changed from head to toe cuz it is a fact that one diaper will not hold 16 oz of milk and 12 oz of watered down apple juice.  It just won't.  (We aren't negligent parents.  We just let sleeping dogs lie).  Wait and wait and then wait some more for your bags.  Wait for shuttle to car.  Drive home.  Get to door.  There's a package!  What's this?  A package?  For me?  FUN!!  There's absolutely no better way to come home from a trip.  *Mental note always come home from long trip to a present, wish me luck.

Ok, first put Z-Man to sleep and bring in bags.  Boo hiss being an adult sucks.  Now the package, laundry will wait :)  My best friend, Carolyn, from day 1 college sent me a present!  I told her we were trying to go veggie during the week so she sent us her favorite veggie cookbook.  (She also sent us a fiction book her and her husband loved which I am not allowed to read until I take and pass a Microsoft Database Developer exam this January. More on that later once I read it)  THANKS CAROLYN!!!

I was so excited about this book!  The first recipe I tried from is called Bulgarian Lentil Stew.  It sounds pretty dull eh?  It was actually really yummy.  I have to say I added more garlic, seasoning, the lentil cooking liquid and had to cook everything longer that instructed.  Oh and I used chicken broth to cook the lentils instead of water.  oops.  Truthfully, I'm not all strict about this veggie thing but it feels really good.

Here's the final product!  Ok it doesn't look like much but it was really good.  Trust me.  Try it!  btw - I really think the name Bulgarian Lentil Stew isn't as fitting as Lentil Cabbage Stew which sounds way tastier.

Lentil Cabbage Stew
1/2 cup green lentils  (C thought it could use more lentils which warmed my heart, do what you like)
3 cloves garlic crushed
bay leaf (recipe said bay optional, weird.  I could see cilantro or some iffy herb or seasoning but bay? Don't get it.)
3 cups water or (veggie or chicken) broth
1 large onion diced
1 green pepper diced (oh yeah the original recipe called for yellow bell pepper which I didn't have and cost twice as much so whatevs)
2 carrots diced
2 stalks celery diced
1/2 cup mushrooms diced (it called for 1 cup which I didn't have - ok I needed the rest for another recipe to be blogged about at a later date)
1 tsp thyme (recipe called for rosemary but I wasn't in the mood)
1 tsp cumin
1-2 tsp cayenne or new mexican chili powder vary type and amt as you like
small cabbage chopped (I used green but not sure if it matters)
28 oz can of diced tomatoes

*TIP - Here's what makes life easier for a cook, prep everything before you start.  I make sure to chop the onion last so I don't cry through the other veggies.  I preheat the soup pot then start chopping the onion. Usually by the time I'm done the pot is ready for oil and the onion.

You'll need a small pot and a large soup pot.  Bring 3 cups liquid to a boil in the small pot.  Add lentils, bay leaf and garlic. Stir.  Cover and simmer about 20 minutes until they are mostly cooked.

While lentils simmer preheat soup pot on medium high heat.  Add olive oil and onion.  Stir, add some salt and pepper and saute for about 3 minutes.  Add pepper, carrot and celery stir and cook another couple minutes.  Add seasonings and cabbage, turn heat to medium.  Cover and cook about 10-20 minutes.  I don't know if it was cuz I kept checking it or what but it took forever for the cabbage to cook (soften).  I also think I didn't chop mine small enough.  I liked the somewhat crunchy texture though as did C so it worked out.

Add tomatoes and lentils with most of the lentil cooking liquid.  For me, there was about 1 cup of cooking liquid left so I added 3/4 of it.  I bet I could have added it all but I wanted to keep it stew-like and got nervous it would be too thin. I know, like 1/4 cup makes that much difference...  Cover and cook until cabbage and veggies are as you like them (or you are too darn hungry to wait another minute to eat).  We pretty much let it cook another 20 minutes at this point but we only did the cabbage cooking part for 10 minutes.  You feel me?  Enjoy!

Slider Stuffing!

White Castle

Taking a break from the vegetarian blogging for a bit to talk about our Thanksgiving stuffing.  We have had Thanksgiving dinner at our house(or condo or apartment) for nearly 10 years.  I say nearly because 3 years ago my sister and her husband hosted.  They did a fabulous job, I definitely appreciated the year off, but I really love hosting.


One year, maybe 2001, we went camping with C's family back in Illinois.  C's Dad took a turkey or chicken, stuffed it with White Castle stuffing, wrapped it in foil and threw in on lit coals in a hole in the ground.  He covered all that with dirt and let it "bake" for a couple hours.  I was completely skeptical but lemme tell you that bird was amazing!  The stuffing?  It seriously changed our lives.

If you've never been to White Castle I am so sorry but you need to run there right now.  No wait, on second thought, wait until Saturday night, go out drinking for about 4 hours, then go through the drive-thru and order a case of "What you crave".  (that's code for a 10 pack of sliders).  The best part is the next day you will learn the real reason they are called sliders.
*Sidebar - it cracks me up that upscale restaurants have "Sliders" since the term is largely used for the runs you get the next day.

Anyway, not only did we trade pizza for mountains but also sliders.  boo hoo.  Fortunately, most grocery stores sell them frozen.  Tuesday I went shopping and they were on sale!  Lucky me!  I bought 4 boxes (6 sliders per box).  The key missing ingredient is the grease when you can buy them from the store fresh and make stuffing with them.  Oh well, the sacrifices we make.

I will make every effort to document the making of this marvelous stuffing.  In the meantime, here's the recipe.

Veggie Stuffed Peppers

Hola! Last night I made vegetarian stuffed peppers. Yum! They could have used another 15 min in the oven but Z was ready to eat so we rallied.

Even though I parboiled the peppers they still were a little firm. C found them bland so next time more spice. He added his own hot sauce.

Mmmmm. So far so good with weeknight vegetarian. Btw- Monday we ate bean quesadillas, we are at three days in a row!

Lisa Needs More Time Veggie Peppers
4 green bell peppers halved lengthwise with seeds removed
1.5 cups cooked crazy Brown Rice Medley from Trader Joe  (any brown rice works)
15oz can of drained and rinsed black beans  (I use low sodium)
15oz can of diced tomatoes (I use salt free)
1 large onion diced
 3 cloves garlic crushed
1-2 carrots diced
1-2 celery stalks diced
3-4 mushrooms diced
2 tsp Cumin
1 tsp Chili powder (I usually use New Mexican Chile Powder)
1 tsp Oregano
Salt/pepper
15oz can tomato sauce (I use salt free)

Bring a large pot of water to a boil.  Place the pepper halves into the boiling water and parboil for about 2-3 minutes until they begin to soften.  Remove peppers from water and put skin down in a greased 13x9 baking dish.

Preheat oven to 350 degrees.  Preheat a nonstick large frying pan over medium-high heat and spray with vegetable spray or use olive oil.  Saute onion until soft (about 2 minutes) then add garlic and stir (about 15 seconds).  Add carrots, celery, and mushrooms and cook stirring often for another couple minutes.  Once carrot begins to soften add turn heat down to medium and stir in seasonings and cook about a minute.  Add tomatoes, rice, and black beans stirring gently.  Taste it here and add more seasoning and salt and pepper if needed.  Stuff the pepper with mixture, top with tomato sauce.

Cover with tin foil and bake 50-60 minutes.  Make sure peppers are cooked to your mother's liking :)  C would add more hot sauce.

*Note - there isn't any cheese in this dish because in my house cheese is only allowed on pizza.  sniff sniff.  (the things we do for love)

Hint hint! POPOVER!

I am a Google Reader junkie.  I have my friend, Emily, to thank.  (btw - today she talks about planting garlic! FUN)  Luckily, she's terrif so I'll let it go.  However, there's nothing wrong with throwing a little guilt her way every now and again. Right?

One of the blogs added to my reader is FoodGawkers.  Just don't even go to their page.  It is terrible and should never have been created.  Here's why, they post about a million yummy pictures from yummy food blogs about 30 times a day.  My goodness, just stop please.  I can't stop myself from cruising through.  Oh well.  Someday I will unsubscribe when I realize what a time suck it is.  That day is not today.

Anyway, my point...  today I saw a lovely picture of a popover!  Which reminds me, someone has a popover pan that she is no longer using.  Would love to borrow said pan to make popovers.  Will invite you over to eat popovers with strawberry butter.  Really, anyone else reading this can feel free to POP OVER too :)

Veggie night two

Normally, my mom watches Z on Wednesdays and we workout then go out for dinner (and undo everything we did at the gym). This week we leave for Chicago on Thursday so we switched the date night to today (wedn)

Workout went fine then we went to an overpriced Mexican (sort of) restaurant, Azul. What kind of restaurant has tacos, enchiladas, and Jamaican Jerk pork chops? Strange. Decent food but way spendy! Hi $13.50 for enchiladas? $16.99 for the jerk chops? Does that seem pricey to you? Am I just cheap or what? Luckily,the enchiladas were pretty tasty so I moved on.

Anyway, the vegetarian option was they filled the enchilada with onion and peppers. No beans? Seems like a no brainer to me. So I went with chicken. C was the big winner and got a salad. Let's not even discuss the chips and salsa. My mom used to hand them right back to the server back in her slim days. What awesome will power! We hand them right back when we need a refill ya know?!

Anyway, long story long... Day two was not a success. C declared eating out during the week is a no go on the way to the restaurant so there you have it.

Veggie night

Well hi! The baby shower went really really well! My sister has some super friends which made the party oh so fun! More on that later but I'll warn you the pix are marginal at best. Today I talked with a camera buff friend about SLR cameras... Maybe someday.

C is reading _Eating Animals_ by Jonathan Safron-Foer. http://www.amazon.com/gp/aw/d.html/ref=redir_mdp_mobile/175-2015185-0142269?a=0316069906 We decided to try and eat vegetarian during the week and reserve eating meat to weekend meals. It is healthy and reduces energy consumption. We started today.

Tonight I made a really easy yummy made up dinner. Trader Joe has cans of fire roasted tomatoes with green chiles. I made pinto bean quesadillas in about 15 minutes!

1 small onion diced
1 large clove garlic
1 15 oz can tomatoes with green chiles (or can of tomatoes and small can of green chiles) draining optional
1 15 oz can pinto beans drained
Large handful frozen corn thawed
Tortillas (I used flour - use what you like)
Cheddar cheese

Spray large Frying pan with Pam (or use olive oil). Sauté onion about 3 minutes in large frying pan, add crushed garlic and stir about 20 seconds. Add the tomatoes with chiles and stir. Add beans and stir gently. Let most of liquid cook off and then add corn. Cook through about three to five minutes.

Spoon filling onto half of a whole tortilla. Top with grated cheese and fold clean half onto filled side of tortilla. Put onto griddle or another frying pan. Toast both sides until golden brown and cheese is melted. Cut into wedges and devour! Yummy and filling!

Happy Weekend!

What happened to the week?  Here we are Friday already!  WOW!  Soooo this weekend is the highly anticipated baby shower for my sister at my house.  It is on Sunday which means the whole weekend will be devoted to prep for it.  17 RSVPd they are coming which sounds pretty big to me.  Seating might be a bit of a challenge for present opening.  I'm pretty excited about this though!

My mom has games planned, groan.  This is definitely other people's thing.  Not mine but I'll rally and put on a happy face about it.  They are never as bad as I think they'll be.

Pizza Bagel!

Ok this is crazy!  Remember Bagel Bites?  
Yes, the frozen things you probably ate in college when you were too broke to order pizza but not desperate enough to eat Pizza Rolls.

Well, this crazy blogger decided to take it to the next illogical level!  She MADE bagels (whole wheat no less) then made bagel bites.  Impressive huh?  


This blog entry is dedicated to my college roomie, KT.  She would literally make pizza bagel everyday for lunch.  No joke.  Everyday!  She used regular bagels and Pizza Squeeze pizza sauce and topped with cheese.  Bake. Done. Love ya KT!

Mmmmm chicken pho

What a yummy yummy lunch! How do you take your pho? I add the basil, bean sprouts, jalapenos, squeeze the lime and add about a teaspoon of hoisen and srarancha. Heaven!

I pretty much fogged up my glasses and burned my tongue as I eagerly slurped without giving it a minute to cool.
