Grape Taffy Apple Bites


It is still fall right?  I know it is see-your-breath cold, dark by 4pm, hot cocoa, and peppermint bark time but let's rewind to warmer, lighter days of fall.  Think pumpkin patch, corn maze, apple cider time.


Picture this... bite size taffy apples, grape-size.  Perfect!  When was the last time you had a taffy apple?  I really can't remember the last time I had one... maybe high school.  What I do remember was I didn't finish it.  It always seems they take the biggest apple they can find and coat it in 3 layers of caramel and nuts.  Quite the investment.

Lemon Shortbread Cookies with Pink Lemon Glaze


Look at these adorable little cookie feet!  [Insert obligatory sticking foot in mouth joke here.]  Bet you are wondering if you stumbled upon the wrong blog.  Well, my sister The Queen is pregnant with another girl! We are all thrilled!



She is due Dec 27 which means now is the time to celebrate!  I decided to make this baby party a Just Desserts party.  The appeal of a Just Desserts  party was more than I could resist.  There are so many desserts you can make ahead, in small sizes, and just plop down when the guests arrive.

Chocolate Malted Cupcakes


Last Tuesday was C's birthday.  We are pretty much the same age.  I'm three months older and sometimes those months can really drag.  For example, the three months I was 30 and he was still 29.  He naturally enjoys rubbing it in during that time.  Jerk Grrr.

Stew-pendous!

This blog is dedicated to my mom, Bubbe! We enjoyed delicious beef stew Christmas Eve.  Yesterday, my mom called me to ask if I was making beef stew again.  !  Huge compliment but, sadly, I don't have plans to make it for awhile.  These days the veggie dishes are getting repeated far more often than the meat dishes.  

As a kid my mom didn't cook at all much.  My dad would always sing to "99 Bottles of Beer on the Wall" -

When they got down to one my dad decided to try his hand at cooking.  However, she did make a great beef stew!  I remember cutting a million vegetables and layering them in order so the veggies that took longest to cook were on the bottom of the pot. Maybe she can share her recipe in the comments if she has it (hint hint). Maybe she'll make this one...

Fast forward to when I met C and his family.  They put beef stew on top of mashed potatoes.  Lemme tell you - HEAVEN!

Stew-pendous Beef Stew with Mashed Potatoes

3 lb boneless beef chuck roas, trimmed and cubed
Salt and Pepper
Canola Oil
2 med onions diced
3-4 celery stalks diced
5-6 mushrooms diced
1 tbsp tomato paste
4 cloves garlic
3 tbsp flour
1 cup red wine
2 cups low-sodium chicken broth
1.5 tsp dried thyme (can use fresh but I'm too cheap)
2 bay leaves
4 carrots peeled and sliced
1 cup frozen peas
5 yukon gold potatoes
2 tbsp unsalted butter

I like to prep all veggies save onion first. then beef, brown beef, then dice onion right before cooking.

Put oven rack to lower middle position so your dutch oven soup pot fits in the oven.  Preheat oven to 300 degrees.

Pat dry the beef with paper towels, sprinkle with salt and pepper.  Put dutch oven on stove on medium-high heat add oil until just smoking.  Add 1/3 to 1/2 of beef to brown on all sides.  I use a splatter guard cuz it can really sizzle! When batch one is browned remove to a large bowl, add more oil to pot and repeat with batch two (and batch three, if needed).  This hands down has to be my least favorite part of the process.

I feel like if you've made it this far you are home free!  All the beef is in a bowl resting.  Return the dutch oven to the stove, add more oil and saute the onions and celery with a pinch of salt for 3-5 minutes. Next add the mushrooms and cook about 2 minutes.  

Add the tomato paste and garlic and stir for about 30 seconds then add the flour and stir for 1 minute.  Slowly add the wine, scraping up any yumminess in the sides and bottom of pot.  Add broth, thyme, bay leaves, and browned beef with the juices.  

Bring to simmer, cover, and move pot to oven. Cook for 1 hour.  Add carrots.  Cover and continue to bake another hour until beef is tender.  After two hours I kept checking every half hour to see if I could cut the beef with a spoon.  That's how you know it is done.  For me, I ended up baking 3 hours this round. WHOA!

Remove from oven when it is ready.  At this point you can either add frozen peas and cover for 5 minutes or allow to cool and refrigerate for a day or two.  When ready to eat warm on stove or oven and add peas right before eating.  Taste and season with salt and pepper if needed.  (Really stew is always better the next day)

I boil the potatoes until they can be mashed somewhat easily with a fork. Drain water, return to pot and add butter and mash.  Since you are adding stew on top I like to keep the mashed potatoes lumpy and dry so they can better soak up the stew. mmmmm.  This is wonderful with crusty bread and butter!  (or those cheapo brown and serve rolls)

Rugalach

Last year my sis and I made these for the first time.  I actually don't remember having them before which really surprises me.  I say this because my mom was supervising our cookie baking last year and when these came out of the oven she had one bite and exclaimed, "These are just like Bubbe's!!"  Bubbe's?  [Bubbe is my great-grandma]

Turns out she made killer rugalach!  Who knew?  Clearly, not me since I picked the recipe cuz they just sounded  wonderful.  Fast forward to this year.  I emailed my grandma and her sister, my great-aunt Sandy, to see if either of them had Bubbe's rugalach recipe.  No luck sadly.  Aunt Sandy did send me her favorite recipe of Rugalach by Ina Garten.  Well, anything is good from her usually.

She didn't disappoint!  Turns out you can make ahead and freeze them. Instead of putting cookies into the oven put them loaded on a cookie sheet into the freezer.  After a couple hours when the dough is hard throw them in a freezer zip-lock.  When you feel like a cookie throw as many as you like into the preheated 350 degree oven.  They take a little longer, but hey you didn't have to make cookies to them fresh baked.  YUM!

Here's Ina Garten's recipe from Food Network. I followed it to the letter.  Twice!  In my ultimate wisdom I doubled the recipe.  Whatever you do, DON'T double the recipe!

Oh... Fudge.

Name the movie...

Well, well it is that time of the year again.  The time when us cooks suck-it-up and pretend to be bakers.  I dug through my utensil drawer and fished out my measuring spoons and cups.  I bought my yearly quota of cholesterol butter and am ready to bake.  Today's episode: Fudge.

More years ago than I care to discuss I was in a sorority at University of Illinois, Pi Beta Phi.  We had a house mom, Sue.  She was probably in her mid-fifties and everyone really liked her.  She kept us in line (yeah right).  Around first semester finals time she made fudge for all the girls and I was in heaven.  I don't think I had ever tried fudge and I was in love. The texture was heavenly!  I asked her for the recipe and she actually gave it to me!  Usually people SAY they will and forget.  Thanks Sue!

[One day she was mysteriously/suddenly let go by Pi Phis, the older and stuffier alum Pi Phis.  There are rumors, of course, but I will refrain from gossip since her fudge recipe rocks my holiday world.]

Fast forward and I meet Carol.  We taught high school math together.  I was bragging about my awesome fudge and she says, "oh the one with 24 marshmallows?"  [Carol: BIG SMILE]  I say, "Actually, yes, 24 marshmallows." [me: smile fading]  Suddenly, my rocking secret recipe seemed, well, kinda lame.  Shake it off, it is still amazing, and here it is.

Fannie May Fudge
4 cups Sugar
1 cup whole milk
1/2 lb butter cubed
1 tsp vanilla
24 large marshmallows
16 oz choc chips
16 oz hershey bar chopped (I used dark and milk choc)
2 oz bakers choc chopped 
You can add nuts but be warned it will ruin the whole batch!

Spray jelly roll pan with cooking spray, set aside.  Put all chocolates in large glass bowl and microwave until melted.  I set power at 80% and zap for 1 minute, check, stir, repeat until melted.  If you are good at multi-tasking this can definitely be done while doing the other half.

In large pot combine sugar, milk, butter, vanilla over medium heat.  Stir until dissolved.  You might need to up the heat a bit toget it to boil. Stay on top of it whisking for two minutes.  I turned heat back to medium or lower once at a boil.  

Remove from heat, add marshmallows.  Stir until melted.  Pour in melted chocolate and stir until well combined. (add nuts at this point if you want but yucky - Sue would add to half)  Pour into jelly roll pan and allow to cool.

umm you will have more fudge than you'll know what to do with!  Promise.

Hint hint! POPOVER!

I am a Google Reader junkie.  I have my friend, Emily, to thank.  (btw - today she talks about planting garlic! FUN)  Luckily, she's terrif so I'll let it go.  However, there's nothing wrong with throwing a little guilt her way every now and again. Right?

One of the blogs added to my reader is FoodGawkers.  Just don't even go to their page.  It is terrible and should never have been created.  Here's why, they post about a million yummy pictures from yummy food blogs about 30 times a day.  My goodness, just stop please.  I can't stop myself from cruising through.  Oh well.  Someday I will unsubscribe when I realize what a time suck it is.  That day is not today.

Anyway, my point...  today I saw a lovely picture of a popover!  Which reminds me, someone has a popover pan that she is no longer using.  Would love to borrow said pan to make popovers.  Will invite you over to eat popovers with strawberry butter.  Really, anyone else reading this can feel free to POP OVER too :)

Cupcake expertise

My sister is expecting a baby girl this January!  I can't wait to meet my yet-to-be-named-but-I-really-like-Audrey niece!  Naturally, my mom and I are planning a shower in November and she has requested white cupcakes with pink frosting.  Being a cook more than a baker this presents a challenge and I refuse to use boxed cake.  So I'm hoping C and I can do a practice run of cupcakes this weekend or during the week.  Here's a list of great tips that I will use to help.  I am planning to run to the store later to get my first piping bag with tips.  Should be fun!
