Grape Taffy Apple Bites


It is still fall right?  I know it is see-your-breath cold, dark by 4pm, hot cocoa, and peppermint bark time but let's rewind to warmer, lighter days of fall.  Think pumpkin patch, corn maze, apple cider time.


Picture this... bite size taffy apples, grape-size.  Perfect!  When was the last time you had a taffy apple?  I really can't remember the last time I had one... maybe high school.  What I do remember was I didn't finish it.  It always seems they take the biggest apple they can find and coat it in 3 layers of caramel and nuts.  Quite the investment.

Sausage, Spinach, and Leek Turnover


I have had a PILE of magazines next to my bed collecting dust.  Finally, I am taking time to read flip through them.  The night before Emily's birthday I stumbled on this recipe from Cooking Light.  They were coming over for dinner and I knew I must make them!


Lemme tell you they were really good and pretty doable on a weeknight if you buy ready-made crust.  I do think they are still fancy enough to make on the weekend too. Who am I kidding?  My weeknight food isn't much different from my weekend food.

Wine, in Illinois?


Ok I just don't even know where to start with this gem!  Last week J-Mo emailed me that her and my dad sent a package to us.  It came a couple days later.  It had a Galapagos calendar with a selection of awesome pictures my dad took on their trip their this fall.  Thanks Dad and J-Mo!!!

Included in the package were the coozies pictured.  Can we discuss how awesome these are?  First, one is lime green (great color only second to purple!).  Second, did you know there is a winery in Illinois?  I didn't.  Finally, they are coozies. For WINE glasses!!!  I just love it.  Thanks again Dad and J-Mo!

btw - is one for Queen?  Wouldn't want her crying "Shaft!"

Make this Veggie Chili

Saturday we had our first ever holiday party!  It was pretty fun if I do say so myself.  Yes, this does mean we skipped having Sunday pizza.  GASP!  Eh, it happens.  C made some yummy burgers (big beefy oniony burgers).  I love Seattle because it is always BBQ season here.


I wanted the party to be appetizers and desserts.  Naturally, vegetarian chili comes to mind.  ???  Typical.  Anyway, I decided it was definitely something people can eat standing up schmoozing and didn't look back.  The verdict?  Success!  (Phew)

My mom has reminded me several times that I was SO lucky it turned out cuz chili was a risk for the following reasons (counting on fingers required):

1) I had never made this recipe before
2) Veggie chili always seems to be lacking something (ummm meat)
3) I didn't know if it would be too hot since kids would be there
4) It is a party and people are standing around and not wanting to eat chili (ok I don't know if she actually added this one but I thought about it)

Turns out this chili had just the right amount of heat. Even C didn't add hot sauce!  Yet, I *think* kids were able to eat it with cheese and sour cream added.  Plus, I added mushrooms to it which added to the beefy taste and I didn't miss meat one bit.  Finally, I also made meatballs for the party, covered in bbq sauce but whatevs.  People could technically add them to the chili if they wanted.  Wonder if anyone did...

The recipe below serves 6 to 8 people.  I quadrupled it for the party as shown in the photo.  Chili always has a million ingredients so don't be scared and my goodness get your spices from a store that carries them in bulk so you don't break the bank!

Make this Veggie Chili Chili

2 tbsp Canola Oil
1 cup diced onion
2 cups red, orange, or yellow bell pepper diced
1 cup diced carrots
1 cup diced celery
1/2 cup diced zucchini
1/2 cup mushrooms diced 
3-4 cloves garlic crushed
1.5 tbsp ground cumin (mmmm cumin)
1 tbsp ground coriander
1 tsp dried oregano
1/2 tsp ground cinnamon
1/4 teaspoon ground cloves
1 tbsp New Mexico red chile powder (or cayenne)
1 tbsp Canned chipotles in adobo sauced (puree or finely mince the pepper)
1 28-oz can of diced tomatoes
1 tbsp Molasses
1 can pinto beans undrained
1 can black beans undrained
salt/pepper

Preheat soup pot over med-high heat.  Add oil. Once shimmering add onions and peppers with a little salt. Saute for 3 minutes.  Add carrots and celery, lower heat to medium, and cook about 5 minutes.  Next add mushrooms and zucchini and cook another 2-3 minutes.  Add garlic and stir, then toss in all spices from cumin through chile powder in ingredient list. Cover and cook 5 minutes stirring occasionally to avoid sticking.

Add pureed chipotles with adobo, molasses, and tomatoes and stir well.  Finally add beans (including their liquids) and gently stir.  Bring to boil, cover and simmer for 30 minutes.  You can eat it as is or with cheese, sour cream, and crackers.  Or as C's family does it - over macaroni noodles.  Or like my dad on top of a baked potato.  I served it with the optional toppings of cheddar cheese, sour cream, diced onions, and seasoned oyster crackers.

Happy Weekend!

What happened to the week?  Here we are Friday already!  WOW!  Soooo this weekend is the highly anticipated baby shower for my sister at my house.  It is on Sunday which means the whole weekend will be devoted to prep for it.  17 RSVPd they are coming which sounds pretty big to me.  Seating might be a bit of a challenge for present opening.  I'm pretty excited about this though!

My mom has games planned, groan.  This is definitely other people's thing.  Not mine but I'll rally and put on a happy face about it.  They are never as bad as I think they'll be.

Zucchini, mushroom, onion and Gruyere Frittata
Underdressed chicken salad with pita quartered
Roasted Cauliflower (and possibly red pepper) with Smoked Gouda sauce on the side
Garden Salad

Grilled Angel Food Cake with optional toppings strawberry sauce, whipped cream, and melted chocolate sauce.

Low carb menu

Well, my sis may have gestational diabetes.  Totally common, I know, but crucial to stay on a strict low carb (sugar) diet.  In a couple weeks my mom and I are hosting a baby shower for her so I'm adjusting the menu.  Here's what I'm thinking:

Crustless Veggie Quiche
? Chicken salad - maybe this is overkill but I love me some chicken salad...
Roasted cauliflower with Gouda and white cheddar sauce on side to drizzle on top
Green salad with pear/apple, goat cheese and balsamic vinaigrette
Whole wheat rolls (store bought - let's get real here)

Angel food cake for dessert with cool whip (0 carbs), cut strawberries (Optional) and chocolate to drizzle.

Mac n Cheese heaven

Ok you saw my award winning photo of the Mac before. Here's what it became... Gouda and white cheddar cheese goodness!

Z had THREE helpings! I would have had three helpings but the cupcakes in my tummy wouldn't move over and make room. Stupid cupcakes.

I totally recommend this recipe (see link from earlier post) one thing I will do next time is sprinkle crushed wheat crackers on top with cheese for some crunch. You feel me?

Mac and Cheese experiment

Busy day today with no pictures to prove it...  

Cupcakes. Check.  (white cake with white chocolate buttercream frosting from friend, Em's cookbook _Baked_ Thanks Em!)  Oh and yum watch for picture of my overfillde yumminess.

Sausage.  C cubed the pork shoulder and it is in the freezer.  hmmm maybe should take out a little early to thaw some.

Mac and cheese using the recipe from Cozy Kitchen.  About to start cooking pasta now.  I'm halving the recipe cuz Z and I are on our own with Mac and Cheese.  C hates Cheese.  Yes, I still married him.  Yes, he still loves pizza. He's Captain Light-on-the-cheese.  One time a buddy of ours and I got our own pizza with TRIPLE Cheese just to show him.  It was actually disgusting.  Live and learn.  I digress...  here's the link and watch for pix

Cupcake expertise

My sister is expecting a baby girl this January!  I can't wait to meet my yet-to-be-named-but-I-really-like-Audrey niece!  Naturally, my mom and I are planning a shower in November and she has requested white cupcakes with pink frosting.  Being a cook more than a baker this presents a challenge and I refuse to use boxed cake.  So I'm hoping C and I can do a practice run of cupcakes this weekend or during the week.  Here's a list of great tips that I will use to help.  I am planning to run to the store later to get my first piping bag with tips.  Should be fun!
